Rajma masala Is a North Indian Delicacy. Follow this recipe step by step and i am sure you gonna Fall In love with it Because its simple yet so delicious.
Lets get started with the Ingredients:
1 cup Rajma ( kidney beans )
1/2 Table Spoon Salt
4 cups water.
1 Big Cardamom
1 Small Green Cardamom
4 Black Pepper
1 Star Aniser
1Inch Cinnamon Stick
For the gravy we need:
3 Table spoon oil
1 Tea Spoon Cumin Seed
1/2 cup Finely Chopped Onion
1Table Spoon Finely Chopped Garlic
2 Green Chillies
1 Cup Finely Chopped Tomatoes
1 Tea Spoon Red Chilly Powder
1/2 Tea Spoon Turmeric
1 Tea Spoon Of Coriander Powder
1/2 Tea Spoon Of Garam Masala Powder

Soak the kidney beans for about 7 to 8 hrs in water.
Pressure cook the kidney beans in 4 cups of water along with salt and whole spices for 3 whistle.
Since the beans are boiling we will prepare the onion and tomato gravy.
In a separate pan heat oil and season it with some cumin seed.Add finely chopped onion and keep stirring on l
low flame till it turns golden brown.
Adding garlic at this time will give u a very good flavor.
Stir it for a minute more and then add chopped tomatoes, Make sure u cook the tomatoes for good 5 to10 min
to remove the raw smell.
Once the tomatoes are cooked add red chill, turmeric, garam masala powder, coriander powder and
cook on low flame till u see oil leaving the sides.
combine this gravy with the kidney beans in the cooker can add up some water at this if required.
close the lid again and pressure cook it for 2-3 more whistle. This helps the gravy to blend in the beans very well.
Garnish the rajma with some green coriander leaves.
Rajma is always Served with Jeera Rice in my house.
Notes to remember:
Cook the Beans Only 50% and cook rest after you add the gravy in it.
Key for any good gravy recipe is That you cook the onion really very well.
Make sure You cook on a low flame only when making The Onion Tomatoes gravy.
If You don’t Have Soaked Kidney Beans You Can Soak them in hot water for about 1 Hr But you need to cook it a little longer in the pressure cooker.
If you want You Can pressure cook and keep the Rajma Handy and make the gravy directly in the pressure cooker But make sure to preserve the stock as well.
If u feel that the gravy is too watery remove 2 to 3 table spoons of beans and make a paste out of it and then add it again to the gravy and cook for 5-10 minutes with the lid open on high Flame.
