Pasta salad

Its a good colorful salad. A little spicy and tangy salad. It is served cold,  you can prepare and keep it in the fridge for 3 to 4 hrs. Make it in advance if you have any guest coming for lunch or dinner.

Serves :3 – 4

Ingredients:

1 cup pasta. (I am using macaroni you can use any pasta of your choice.)

1/2 cup Each:

Chopped Capsicum. (Boiled in hot water for 3 minutes)

Diced carrot (boiled in hot water for 3 min)

Sweet Corn. ( I like to pressure cook them for 2 whistle)

Chopped Tomatoes.

Chopped Onions.

Chopped lettuce.

4 – 5 black olives chopped.

1 tea spoon of finely chopped green chilies.

1 table spoon of olive oil.

1 table spoon of vinegar.

1/2 tea spoon of pepper powder.

1/2 tea spoon of red chilly flacks.

1/2 tea spoon of oregano.

Salt to taste.

Method:

Cook the pasta in 4 cups of hot water. Drain the excess water out and keep it in a strainer under cold running water. drizzle some olive oil or else it will stick together.

In a large bowl mix the pasta along with all he ingredient and add salt according to your Taste.

Cover it and Keep it in the refrigerator for at-least 15 to 20 minuts.

Note:

If u don’t want to use vinegar use a freshly squeezed lemon.

Carrot and capsicum should not be over cooked
