This recipe is super easy. All you have to do is marinate it and bake it in the oven. I like to marinate it twice. Its a little spicy and a little tangy.
Lets see the ingredient:
1 chicken leg quarter.
1 table spoon of lime juice
1/4th of a tea spoon of red chilly powder
1/4 of a cup of curd
1/2 tea spoon red chilly powder
1/2 tea spoon turmeric powder
1/2 tea spoon of garam masala powder
1 tea spoon coriander powder
1 table spoon of ginger,garlic and green chilly paste.
1 tea spoon clarified butter melted (ghee)
1/4 cup of curd
1/2 cup chopped mint and coriander leaves
1 green chilly chopped
a pinch of salt
Wash and make some slit on the chicken from both the sides.
Mix lime juice and chilly powder and brush it over the chicken. ( for 15 minutes)
after 15 minutes Mix all the ingredient listed under second marination and spread it on both the sides of chicken. Cove it and Keep aside for at least 30 minutes or up to 7 hrs in the fridge.
Grill In the pre heated oven at 180 degree Celsius for 15 minutes on each side.
Serve hot with some salad and mint sauce.
For the Mint sauce:
Blend all the ingredient together in a mixer for a 30 seconds.
Cooking time may differ from oven to oven.
While grilling I like to use aluminum foil over the griller and make some holes using a tooth pick and place the baking tray under it. As the water released during grilling the chicken is collected in the tray. I find it easy to clean
