On a lazy day I like to cook this. This is a complete meal full of flavor and no hard work. I call it instant vegetable pulao as it is prepared in 30 minutes.
1-1/2 cup rice
1 small size onion finely chopped
1 large tomato finely chopped
1 cup mix vegetable of your choice
1/2 cup green peas
1 table spoon ginger finely chopped
1 table spoon garlic finely chopped
1 table spoon green chillies chopped
1 bay leaf (Tej Pata)
4 black pepper
1 inch cinnamon stick
1 small cardamom (Choti elaichi)
1 big black cardamom (Badi elaichi)
1 star anise
1/2 table spoon coriander powder
1 tea spoon red chilly powder
1 tea spoon turmeric powder
salt to taste.
1/2 tea spoon mustard (rai)
1/2 tea spoon cumin (jeera)
2 table spoon oil
1 table spoon clarified butter (ghee)
Wash the rice and keep aside.
Add 2 table spoon oil in a pressure cooker heat it and then add clarified butter (ghee), mustard seed, cumin seeds and all the whole spices.
Add chopped onion and stir for a minute, now add ginger, garlic and tomatoes. Stir for another minute.
Add all the vegetable and powder spices along with some salt and stir for a minute.
Now add washed rice and water, Mix it properly.
Close the pressure cooker and cook for 2 long whistle.
Let it cool down and garnish it with some mint leaves.
Serve Hot with some Raita, Papad, Pickle and Raddish.
