Palak Paneer ( cottage cheese in spinach gravy )

Spinach is a winter superfood with full of nutrients. But do you know cooking spinach actually increases its health benefits! That is because the body cannot completely break down the nutrients in raw spinach. The way to get the best from the leaf is to buy it fresh and eat it the same day. Spinach is good for digestion, It eases constipation and protects the mucus lining of the stomach so that you stay free of ulcers. It also flushes the toxin from the body and brings you quick relief from dry, Itchy skin and lavish you with radiant complexion.

Today I am sharing Palak Paneer recipe with you which is made up of spinach puree gravy and cottage cheese.

Serves:2

Ingredient:

1 bunch of spinach leaves. (palak ke gatti)

50 – 60 grams of cottage cheese (paneer) cut in 1/2 inch piece.

1/2 inch of ginger grated

3-4 garlic cloves grated

2 green chilies

2 table spoon of onion grated.

1/4th tea spoon of turmeric powder

1/4th tea spoon of garam masala powder

1/4th tea spoon of coriander powder

salt to taste

For seasoning (tadka):

1 table spoon of clarified butter (ghee)

1/2 tea spoon of red chilly powder

Method:

Wash the spinach leaves and then add 1 cup of water and cook for about 2 to 3 minutes on high flame. ** over cooking will make it darker in color and will loose all its nutrients**

Now blend it in a blender the spinach with chillies and make a paste.

Transfer the same in a pan and all the grated onion, ginger, garlic, turmeric powder, garam masala powder, coriander powder, cottage cheese and salt as per taste.** add water if required** and cook for 5 to 6 minutes on medium/low flame.

The gravy will become a little thick and the cottage cheese will also get the flavor of the gravy.

Before you serve heat 1 table spoon of ghee (clarified butter) and add 1 tea spoon of red chilly powder. Season the gravy and serve hot.

Note:

Can use low fat cottage cheese.

If you want you can skip the seasoning step.

Seasoning the gravy will give the richer taste, so season it right before serving.

The total cooking process should not be longer then 10 minutes or as I said earlier the gravy will become darker in color and that is not healthy.
