Egg Curry

Egg curry is a spicy onion tomatoes gravy. There are various ways of making it but today I made the basic egg curry recipe. Normally served with bread or Roti.

 

Ingredients:

2 table spoon oil

1/2 tea spoon mustard seeds

2 medium size onion finely chopped

1 large tomato finely chopped

1 medium size potatoes (Mashed)

2 green chillies finely chopped

1 table spoon ginger garlic paste

1/4th tea spoon garam masala powder

1/4th tea spoon turmeric powder

1/2 tea spoon coriander powder

salt as per taste

water as required

 

Method:

In a wide pan heat oil then add mustard seeds and let that crackle.

Add onion and fry till golden brown.

Add ginger garlic paste and tomatoes along with chopped green chiles, red chilly powder, turmeric powder, coriander powder and salt. Cook till every thing is very well combined then add mashed potatoes and water and cook for 5-10 minutes

Now add the boiled egg and cook for 1 or 2 minutes.

Add chopped coriander leaves and serve hot.

 

Note:

you can even cut the boiled eggs in 2 pieces.
