Medu vada.

Medu vada are also known as urad dal vada. They are spicy fritters made from urad dal (black lentils) shaped like donuts. Very famous breakfast recipe of south India. And In Northern states of India they are served as snacks. Shaping them is little difficult part as the batter is very soft but I will give u some easy tricks to shape them well. My husband call me symmetric freak as I make every thing of same size and shape…!!! But thats the way I love it.

Serves: 9 big size pieces


1 cup white Urad Dal (black lentils without skin)

3 green chillies

4 table spoon of chopped coriander

3 table spoon ginger chopped

salt as per taste

white sesame seeds for garnishing

Oil for deep frying


Soak the urad dal for 4 to 5 hrs in water.

Drain all the excess water out.

Grind the urad dal with green chillies, coriander leaves, ginger and salt..**make a smooth paste**

Heat sufficient oil in a pan.

Now to shape them I like to use a ice cream scooper and small piece of butter paper. You can use round serving spoon in place of ice cream scooper and plastic sheet instead of butter paper.

Grease the butter paper with few drops of oil. Take a scoop ( around 3 table spoon) of batter with the help of ice cream scooper and place it on the butter paper sprinkle some sesame seeds and make a hole in the center with the help of your finger.***It will have a donut shape now***

Flip the vada in your hand and peel off the butter paper. Drop it in hot oil and cook on medium flame. Till its become slightly golden brown.repeat the same process with the rest of the batter.


If you want you can shape them in your hand itself. But make sure your hand is wet before placing the dough.

Make sure the oil is very hot before placing the vada in it.

Fry in medium to low flame only.

Serve it with some coconut or peanuts chutney.
