The Guar or cluster bean (Cyamopsis tetragonoloba) is an annual legume and the source of guar gum. It is also known as Gavar, Guwar or Guvar bean. Cluster Beans is low on calories and fat and has zero cholesterol. It is rich in water soluble fiber which helps in digestion and acts as a laxative. It is considered to be beneficial in treating irritable bowel syndrome. It is a good source of plant based protein and therefore beneficial to people who are on a vegetarian diet. It is a good source of vitamin C, vitamin K and vitamin A. It is helpful for those who are on diet control and weight loss and helps treat diabetes. It also has various minerals like manganese, iron and potassium.
Its my favorite vegetable curry recipe which I feel is ideal for dinner with some phulks (Indian bread).
250 grams gaur/ cluster bean/ gavar
1 medium size potato pealed and chopped in pieces
2 medium size onion finely chopped
3 medium size tomato finely chopped
1 table spoon finely chopped garlic
1/2 table spoon finely chopped green chilly
1/2 tea spoon of red chilly powder
1 tea spoon of coriander powder
1/4th of a tea spoon of garam masala powder
1/4th of a tea spoon of turmeric powder
salt as per taste
3 table spoon oil
1 tea spoon mustard seeds (rai)
A pinch of carom seeds (ajwain)
first we need to wash the gaur (gavar) and then cut the head and the tail (throw away the head and the tail), then slice it from the center vertically and horizontally. Repeat the same process for all the gaur beans.
Now in a medium size deep pan (kadhai) heat oil then add mustard seeds let that splutter and then add carom seeds and chopped ginger slightly fry for a second and then add onion and fry the onion till it turns golden brown.
Add chopped green chilies and tomatoes to the onion and cook till the raw smell is gone and then add turmeric powder, red chilly powder, garam masala powder, coriander powder and salt as per taste and cook till the oil starts leaving the sides.
Now add chopped potatoes and chopped gaur and mix it well with the onion and tomatoes gravy.
Now close the lid and cook the vegetable in slow flame for 15 to 20 minutes till the potatoes are cooked completely (tossing the vegetable at an interval of 10 minutes)
Serve it warm with some roti.
