Vegetable Poha

Poha, made from flattened rice, is an easy-to-cook, nutritious snack. It is often eaten for breakfast or brunch. Its a very popular Maharashtrian breakfast dish. I have made this poha by adding boiled potatoes, green peas and tomatoes which gives a very rich and different taste from the regular kanda poha.

Lets see quickly the ingredients First and then the steps to prepare the same.

Serves: 2-3


2 cups beaten rice (Poha)

1 medium size onion finely chopped

1/4th cup green peas

1 small size tomato finely chopped

1 medium size boiled potato diced

2 table spoon oil

1/2 tea spoon mustard seeds

2 green chillies finely chopped

few curry leaves

1/2 tea spoon of turmeric powder

salt as per taste

1/4th tea spoon of sugar (Optional)

chopped coriander leaves for garnishing

lemon slice for serving



Put the poha in a sieve and hold it under running water for a minute. Keep aside to drain.

Heat the oil in a pan on a medium flame and add the mustard seeds, curry leaves and green chillies. Fry till the spluttering stops and then add the onion. Fry till soft and translucent.

Add the green peas, turmeric, salt as per taste and stirring frequently, cook for 2-3 minutes.

Now add chopped tomatoes and diced boiled potatoes, cook for 2 minutes.

Drain the poha completely to remove all water and add it to the above mix. stir well to blend all ingredients and adjust salt if require.

Add sugar and then cover it with the lid and cook for another minute on low flame. Turn off the fire.

Garnish with chopped coriander and serve while hot. Poha tastes great with lime juice so serve it with some lemon wedges….!!!!
